Dessert is my least-favorite part of any meal. I don't have much of a sweet tooth, I don't generally like the alcohol that's paired with desserts, and my skill-set with pastries, cakes, and other sweets is probably the weakest aspect of my chef skills.
I have a few standard desserts in my arsenal - some of them require hours of prep and cooking, others are quick-and-dirty meal-enders designed to match just about any meal. I want to share with you the easiest dessert ever, a final course that just about anyone can prepare with little in the way of cooking skill or experience.
Paleo-Chocolate Custard
I'm not a huge fan of the Paleo food movement, but this chocolate custard recipe given to me years ago by a friend who swears by the Paleo diet is my favorite fast dessert, one that tastes like you've spent hours slaving away in the kitchen, but really only takes a few minutes to throw together.
Ingredients
1 can coconut milk
1 cup dark chocolate chips
1 teaspoon cinnamon
Rum to taste
Putting It Together
Start by melting your chocolate chips into your coconut milk in a saucepan over medium-low heat. You'll want to briskly stir this with a whisk while it's all melting together. Once everything is all melted, toss in your cinnamon and as much rum as you like.
The trick to making this ridiculously simple dessert work is to pour your "custard" into the serving dishes and letting them set in the fridge for at least 2 hours, preferably more like 4. If you want, you can go beyond the whole Paleo thing and top the custard with whipped cream or any other sweet treat you like.
This particular version of the recipe makes seven one-quarter cup servings, though you could use larger dishes for larger portions if you wanted.
